How to Cook for the Nutrisystem Diet

Recipe 1: Peach and Apple Pancakes

Ingredients:

  • 1 package of NutriSystem pancake mix
  • 1/2 cup fresh peaches, cut into small cubes
  • 1/2 cup red or green apples, sliced thinly
  • 1 tablespoon pecans, walnuts or almonds
  • 1 large egg
  • Ground cinnamon to taste
  • 1 or 2 packets of Splenda
  • 1 teaspoon vanilla extract
  • 3 tablespoons instant oats
  • Fat and sugar free maple syrup, to taste
  • Nonstick cooking spray, preferably butter flavored

Cooking Directions:

  1. Spray a large skillet with butter flavored nonstick cooking spray
  2. Heat pan over medium-high
  3. Place apple slices along the bottom of the pan
  4. Sprinkle apple slices with cinnamon and Splenda
  5. Cook until softened, then remove apples and clean and re-spray skillet
  6. In a medium bowl, mix Nutrisystem pancake mix with the egg, vanilla, cinnamon and cubed peaches
  7. Pour mixture into the skillet
  8. Cook until golden brown on each side
  9. Top with apples, nuts, oats and maple syrup
  10. Serve

Recipe 2: Crab Stuffed Mushrooms

Ingredients:

  • ½ pound shredded crabmeat, which may be either fresh or pasteurized
  • 12 large button, crimini or baby portabello mushrooms (this should be about 1 pound), each washed and then dried off with a kitchen towel
  • 1 tablespoon light, reduced fat mayonnaise
  • 1 tablespoon fat free yogurt, plain in flavor
  • ½ teaspoon packaged crab seasoning blend
  • Dash Tabasco or other brand of hot sauce
  • Salt and freshly ground black pepper to taste

Cooking Directions:

  1. Turn on the broiler portion of your oven
  2. Completely remove all of the stems from your mushrooms, reserving only the caps
  3. In a medium bowl, mix together the crabmeat, fat free yogurt, light mayonnaise, crab seasoning, salt, pepper and hot sauce
  4. Fill each mushroom cap with this mixture
  5. Place mushroom caps onto a broiler pan
  6. Broil for 5 minutes
  7. Serve

Recipe 3: Sloppy Joe and Avocado-Mango Salsa

Ingredients:

  • 1/2 of a pita bread (whole wheat)
  • 1 NutriSystem Vegetarian Sloppy Joe
  • 1 ounce of fresh mango, cubed into small pieces
  • 1/4 cup finely chopped jicama
  • 1 ounce of ripe avocado, diced into small pieces
  • 2 tablespoons red or sweet Vidalia onion, finely diced
  • 1/2 of a fresh jalapeno or serrano chile (remove seeds and membrane if you do not like your food to be too hot)
  • 1 fresh garlic clove, chopped finely
  • 2 teaspoons freshly squeezed lime juice
  • 1 teaspoon canned pineapple juice
  • 1 tablespoon fresh cilantro, finely chopped
  • one pinch of salt
  • one pinch of cumin

Cooking Directions:

  1. In a bowl, mix together all ingredients except sloppy joe mix and pita bread
  2. Prepare Nutrisystem Vegetarian Sloppy Joe Mix according to package instructions
  3. Warm pita in the microwave for 10-20 seconds
  4. Stuff pita with sloppy joe, and top with half of the prepared salsa
  5. Serve with the remaining salsa on the side
