How to Make Prime Rib with Creamed Horseradis...

What You'll Need

Ingredients: 
  • 1 9-lb rib roast (about 4 ribs), tied with kitchen twine
  • 2 1/2 tsp kosher salt
  • 2 tsp pepper, freshly crushed
  • 2 tbsp Dijon mustard
  • 1 tbsp garlic, minced
  • 1/3 cup heavy cream
  • 1/3 cup prepared horseradish
  • 14 oz. beef broth
  • 1/4 cup cognac
Equipment: 
  • Oven
  • Broiler pan or roasting pan
  • Small bowl
  • Medium bowl
  • Electric mixer
  • Plastic wrap
  • Measuring cup
  • Bowl
  • Spoon
  • Corrugated knife

How to Make Prime Rib with Creamed Horseradish

1. Preheat oven to 450º F (232º C). Place prime rib on pan. Make sure you have a rack to elevate the prime rib on the pan, so that the greases can drip off.





2. Sprinkle salt evenly on prime rib, reserving 1/2 tsp.







3. Mix Dijon mustard and garlic.







4. Baste prime rib with mixture. Add black pepper. Roast prime rib for 20 minutes, making sure to place it rib side down, fat side up. Reduce temperature to 325º F (163º C) and roast for two hours and 30 minutes.




5. While prime rib is roasting, mix heavy cream in medium bowl with electric mixer for one to two minutes until thickened but not yet holding soft peaks. Fold in horseradish. Add 1/2 tsp salt and a pinch of black pepper. Cover with plastic wrap and refrigerate for 30 minutes to an hour.




6. To create gravy, pour pan juices into measuring cup. Skim fat off of top. Heat pan to medium. Pour in half a cup of beef broth and a fourth a cup of cognac. Use a spoon to scrape off any brown pieces. Cook until most of the liquid has evaporated. Add remaining beef broth, pan juices and pepper. Simmer for two minutes, then pour into bowl. Set aside.

7. Slide along the edge of the rib bone, across and down. Remove kitchen twine. Serve prime rib, sliced, with gravy and horseradish.
